This is 50 garlic clove mashed potatoes for all the garlic girly gatherings this holiday season. These are perfectly rich and creamy and flavorful. I only want these mashed potatoes from now on. We’re starting off with garlic comfi. You want to reserve some of that oil and mash the cloves, but keep some of them whole for texture. For this recipe, I’m using the top quality Yukon gold potatoes from Idaho. Just look for that grown-in Idaho seal when shopping. We’re boiling these in salted water until they’re fork tender. Once again, save some of that water. Ricers help get that fluffy potato texture and it’s built an arm workout because I was shaking. Now on to our flavorings. Into the potatoes, add your reserved potato water, garlic oil, butter, heavy cream, fontina cheese, ideally freshly shredded, salt, and mix before folding in your garlic confi. We think this is best served with an extra p of butter, some more garlic comfy cloves, the garlic oil, cracked pepper, and chives.
