Second attempt at the sauce though, the first one clumped very badly because it was too hot.

    Your cheese sauce still clumped a little bit.

    If you want to make it simple just add corn starch to the sauce to get a better temperature range, if not you should probably wait a little bit more to get a lower temperature.

    Still a decent plate of pasta. I actually prefer that stage with fontina since it will melt a lot more but will not clump as bad.
