these are boiled mushrooms preserved in salt water i purchased from a local grandma. usually her products are good quality (i eat pickles and jams she makes all the time, this though first time) and she reassures me its fine and safe to eat (ive shown her a picture). idk though i highly doubt it. i do feel bad and dont rly want to throw away all these mushrooms as the can is huge 😭 there was water missing on top of it a bit. they smell fine btw

Don’t eat this.
Throw this away.
Please don’t feel bad. Let me absolutely absolve you of any guilt.
You are under NO obligation to eat spoiled food, EVER. No matter who made it, no matter how big the jar, no matter what you paid.
So not eat those!!! I’d never buy another thing from her if this was something she not only sold but tried to double down on it being “safe”
Your instincts are bang-on–don’t eat this. Throw this away and feel no guilt.
Don’t think of it as wasting food. Think of it as disposing of potentially dangerous pathogens.
What was your process? I’m not sure what you consider huge, but based on that comment it sounds like the jar might be larger than a pint. Some foods have only been tested to certain size jars.
The fact that she is telling you it’s fine even after seeing the picture is a huge red flag. I would NOT continue to purchase from her. Listen to your gut or it will MAKE you listen.
Could this go into compost?
