My coach is actually slowly bringing my calories up and I’m finally on 1450 a day as opposed to 1200 that I was on for the last 4 weeks but I still find this sub super useful for recipes and ideas. So, today I wanted to share something quite unique. If you live near an Eastern European supermarket, check out if they have wafer sheets. Wafer sheets are generally used as a shortcut for easy no-bake desserts, cakes, or even savoury appetizers. They are neutral in flavour and crispy. Once you spread some filling over them, they get soft, so you end up with some delicious cakes. I’ve used them before with pastry cream, cream cheese frosting, or even tuna salad for savoury cakes.

Anyway, here I have one Wafer Sheet which is 78 calories. On top of it there’s a sort of tuna salad made with drained tuna, quark (softer and lower calories version of cottage cheese with the same protein), scrambled egg whites, wilted spinach, and a tiny bit of salsa. Wafer gets softer after a few minutes and you need to roll it, almost like tortilla, so if you like crispy base, you can just break a few pieces of the wafer and use them as chips to scoop out the tuna salad or whatever else is your filling.

It’s not the most common or easy to find ingredient, but it’s massive (my hand is there to show the size) and relatively low calorie.
