Any day is a good day for pizza: Pizzeria La Gitana’s authentic, European-style pizza makes it even better. It was 15 years ago when the Yelm location opened its doors. Award-Winning Wood-Fired Pizza in Olympia and Yelm
Regulars are familiar with the thin-crust pizzas baked in a hot, wood-fired oven. Your made-to-order pizza acquires unique flavors not replicated in a conventional oven. It’s the short, hot cooking time that imparts caramelization of the ingredients. Bakers keep keen attention for a perfect finish. The pizzas’ tastes and flavors are enhanced by La Gitana’s use of organic ingredients. The flour comes from Europe, and many gluten-sensitive diners are pleased to discover they can eat meals here without difficulties. Pizza, Pasta, Salads and Award-Winning Dessert
The menu goes beyond pizza to include pasta dishes, salads, soup and desserts. The Italian noodles are made fresh from organic or non-GMO flour. Each order is cooked as it is received. The sauces are also made to order. Try the boscaiola, a white sauce with cream, ham, organic mushrooms and garlic. Other favorites are a classic carbonara, a blend of cream, bacon, organic egg and Italian parmesan cheese or the creamy pesto. One sauce is made ahead of time, La Gitana’s Bolognese. Hours are needed to integrate all the flavors in this meaty sauce. There are also specials each month.
Enhance any meal with one on La Gitana’s exceptional antipasto boards. Savory, up-scale imported meats and cheeses are artfully served on specially made boards. Even vegans can find happiness and inclusion with one created especially for them. House-made flatbread with rosemary and coarse salt accompany the platters.
The beloved tiramisu is created in-house from layers of espresso-soaked ladyfingers, mascarpone cream and a dusting of cocoa. “We sell hundreds every month,” says manager and co-owner, Marian Licxandru. It is a testament to the quality and consistency that keeps customers coming back for more.

Italian Restaurants in Thurston County are Charming and Casual
Licxandru pays attention to details not only in the kitchen but in the dining areas, too. The ambient, small white lights and a rose on each table create cozy comfort. Remember Yelm Jazz in the Park Summer Event
Summer is still on the distant horizon, but you can still mark your calendar for the annual weekend of Jazz in the Park. It’s a much-anticipated annual tradition. It takes place the first weekend in August on Friday and Saturday evenings. The free weekend is offered through a partnership of La Gitana and the City of Yelm. Listen to live jazz with regional and local musicians.
Food vendors are on hand, and people are welcome to bring their own picnic baskets. It takes place in the city park where there is plenty of room for everyone. Come together to relax, mingle, and eat. Historically, the summer event lands on the perfect summer weekend.
