
Made a quick 20 min lunch prep since my hangover was just too real on Sunday+Monday. Stay tuned for meal number two later tonight.
Asian Glazed Turkey Meatballs
Meatballs –
1 lb ground turkey (93/7)
1/2 cup panko crumbs
3 tbsp egg whites (I hungover-ly forgot to buy more eggs too)
Salt, Pepper, Onion Powder, Garlic Powder
Combine and form into balls – bake at 425 for 16 min
Glaze –
4 tbsp low sodium soy sauce
1 tbsp chili paste
1 1/2 tbsp honey
2 tbsp rice vin
2 garlic cloves
Mix and heat to a boil, reduce. Add cornstarch slurry (8 tbsp water + 2 tsp cornstarch) and boil to thicken. Add meatballs to coat.
1 pack instant mash potatoes (don't judge, it fits my macros and tastes like childhood)
1 pack green beans, tossed in s+p and olive oil. Cooked on the stove for a quicker line up with the meatballs in the oven but normally I would bake at 425 for 12-14 min
Best served with a large glass of Liquid IV to sip on.
