An epic collision of flavours and textures — one of my all-time favourite feasts. At its heart, it’s a gloriously messy, ugly-delicious taramasalata-basted butterflied chicken – rich, savoury, and deeply satisfying. Alongside it is a dangerously addictive, garlicky toum – that Lebanese garlic sauce you’ll want to put on everything. And to complete the spread – cabbage grilled until its edges are lightly charred and smoky, the leaves softened and sweetened, mingled with silky, caramelised shallots.

[Music] We’re going to do the tamas split chicken, charred cabbage, a tomb bubba style. It’s going to be fresh, umami, zesty, just main character energy. There’s no graceful way to do this, but we’re getting right in there. It’s worth it for the extra flavor. Look at that. Yum. Barbecue’s fired up. I’m fired up. Let’s get it on. We’re roasting our chicken flat to create the perfect canvas to just slather it in zingy oilbased smoky tamasada. It’s going to be insane. This dish is all about ugly deliciousness. And one of the key veggies I’m using is cabbage. It transforms over heat, especially when we char it up. Smoky flavors. [Music] Now I’m bringing in the taram masalada. This is wild, but check this out. Baba’s DNA is woven over flame and heat. It’s all about that fiery energy, bringing people together, and that’s what the Genesis is all about. [Music] All right, it’s tomb time. Look at that. We have an emotion. That is peppery, garlicky. It’s going to be freaking delicious. [Music] Look at that. That’s what we want. Gnarly, but so sweet on the inside. We’re doubling down on the flavor, the caramelization. And we’re bringing out all the salty depth of flavor of the tamasalada. Using that consistent heat to just brown that entire crispy skin surface. Look at that. That is just stunning. Oh, it’s looking so good. I’m so happy with that. I’ve hit that sweet spot of the Mayard reaction. Sounds a bit nerdy, but all you have to do is just trust me and know that’s insane. Check out this sexy plate, JP. Oh, that smells so good.
