Went to my local butcher today got 3.25lbs of jumbo wings split with tips cut off (saved for bone broth) for $9. Also grabbed 5.5lbs of boneless chicken breast for $16. Olive oil and seasonings I.e. garlic onion salt pepper cayenne chili powder cumin and smoked paprika. Into the fridge for 30 min, smoked at 225 for 1 hour. Set gas grill and oven to 425 about 10 min before end of cook. Grill for 8 1/2 min on both sides. Sauce and place wings on wire rack in the oven for 7 min to let sauce set. Let rest for 4 minutes and enjoy with blue cheese or ranch🔥

I do the same almost weekly but confused on why you bake at end?

Looks amazing and because they’re locally sourced I’m sure the taste was excellent

We have a butcher near and I keep telling the lady let’s shop there for meat… it’s been decades since I had meat not mass produced.

Cheers. Shows what’s possible. And not even faulting the choice of ranch because I would smash those wings with ranch.

Great work dude. They look exceptional and thank you for breaking down how you made the magic happen. Big props to the butcher pick up.
