Orange Chicken and Fried Rice

Chicken
1 lb chicken breast, cut into inch pieces
Toss in corn starch and air fry with spray oil. I did two batches 400 degrees, 9 minutes each

Orange Sauce
1 cup OJ
2 tbsp Soy Sauce
2 tbsp rice vin
1/4 tsp ginger
2 cloves garlic
red pepper flakes to your liking
1/4 cup brown sugar
1 tbsp corn starch
Mix and bring to a boil. Reduce till thickened and toss chicken in.

Fried "Rice"
2 tsp olive oil
1/2 onion
1-2 cloves of garlic
1 cup frozen peas corn
1 bag cauliflower rice (green giant)
1 cup cooked day old white rice
1 1/2 tbsp soy sauce
1/2 tsp sesame oil
S+P
Heat oil over medium/high heat, add onion and garlic till softened. Toss in veggies and both rices (I pre heated the frozen cauli rice in the microwave for 3 minutes). Add sauces and seasoning, toss and cook for 5 min more
