This is one of my
favorite copycat recipes. I tried this cranberry orange
bread at a local bakery, and knew I had to recreate it. It
has the perfect moist and tender crumb, and this loaf stays soft
for days. It’s also the easiest recipe. Stir together the wet
ingredients, then whisk the dry ingredients, cream together the
butter and sugar, then mix everything together. Last but
not least, we add a little bit of flour to the cranberries,
because it helps keep them from sinking to the bottom, and fold
them in. You’ll love the little bits of orange zest in the
batter, and every bite is loaded with juicy cranberries. Now the
glaze is so easy. Once the loaf is at room temperature, combine
powdered sugar, some orange juice and orange zest, then
drizzle that generously over the top. All that’s left to do is
