🍎 Ingredients
For the Apples:
• Apples (peeled, cored, chopped) – 3 medium (about 450 g / 1 lb / 3 cups chopped)
• Sugar – 2 tbsp (25 g / 1 UK tbsp + 1 US tbsp)
• Cinnamon – ½ tsp (2 g / ⅛ UK tsp + ⅛ US tsp)
• Lemon juice – 1 tbsp (15 ml / 1 UK tbsp + 1 US tbsp)
For the Batter:
• Plain (all-purpose) flour – 120 g (1 UK cup / 1 US cup)
• Baking powder – 1 ½ tsp (6 g / 1 UK tsp + ¼ US tsp)
• Sugar – 100 g (½ UK cup / ½ US cup)
• Butter (melted) – 60 g (¼ UK cup / ¼ US cup / 4 tbsp / 60 ml)
• Milk – 120 ml (½ UK cup / ½ US cup / 8 tbsp / 120 g)
• Egg – 1 large (about 60 g)
• Vanilla extract – 1 tsp (5 ml / 1 UK tsp + 1 US tsp)
• Pinch of salt
Optional Topping:
• Extra sugar (for sprinkling) – 1 tbsp (12 g / 1 UK tbsp + 1 US tbsp)
• Butter (for dotting) – 15 g (1 tbsp / 1 UK tbsp + 1 US tbsp)
Heat oven to 180°C (350°F).
8-inch (20 cm) round or square tin.
Bake for 35–40 minutes, until golden and a skewer inserted into the centre comes out clean.

Oh, on there. Oh man, that is hot. There we go. We got all our apples in there with our sponge. Oh, that is delicious. Come on. Hi everyone. Welcome to Backyard Share Farm today. Easy batter topped apple pie. Forget the pastry. We’re making a batter top like a batter pudding. It’s oldfashioned. It’s an oldfashioned recipe. So easy to do. We peel some apples, core them, dice them, chuck them in a tub. I’ve got an 8 in uh tin thing here. That will do. 8 in by 8 in, 20 cm by 20 cm. Mix up a batter. Chuck it on there. Throw it in the oven. Bring it out. Serve it up. Job done. Let’s get on. apples. Peel and core. Dice your apples and throw in your tub. Peel and cer apples any which way that you normally do. Up to you. Cer knife peeler, anything. [Applause] And as you can see, these are the usual type of things that I buy in. As soon as I see them reduced, I’m having them. They’ve got a couple of bruises. Hey, we’re not worried. Nothing wrong with that. Oh, this one’s a bit more. Right, just crack on. Get all your apples done, peeled, and then we’re going to c them. Dice them off. Now, you need to be cubing up your apples as big or as small as you like. I’m just going to whiz this through like this. And then we’ll start cubing. Right, just cube them up and chuck them in your tub. Want some big ones? Want some small ones? Anything any size you like. Just cube them up. That’s the hard work done. Look. There you go. Right. What we need to be doing is taking a little bit of cinnamon and a little bit of lemon juice. Now, you can mix all this in a bowl or you could just do it like this. [Applause] Little bit of sugar in there. Come on. Give it a mix up. Now I’m going over there with a little bit of salt. That should ignite our taste buds with that sugary apple. Fabulous. Okay, first stage. One side. Oven on 180. Flour. Allpurpose plain flour. Baking powder. Sugar. Little squirt of vanilla. some milk, an egg, chuck in some melted butter, and give it a whisk. Now, this wants to be a thickish batter, okay? It doesn’t want to be runny like a pancake batter, but it doesn’t want to be too thick either. So, you might have to add a little bit more milk, or you could even add water. But that to me is a fantastic batter straight out. We’re lucky there. Look at that. Fabulous. We’re ready to go. So, what we’re aiming for is to put our batter on there. And if the apples stick through the top, that’s absolutely magic. So, we just got to get the batter on there fairly even. So, in we go. Come on. [Applause] A little bit of sprinkled sugar over the top. There we go. Now, a really, really old-fashioned way with these type puddings is little knobs of butter here, there, and everywhere over the top. Now, I’m not going to go too much on that cuz I just want to lift up the pudding without the butter. So, that’ll do just for sure, the oldfashioned way. Right. Stick that in the oven. in the oven. 35 40 minutes. Come on. Okay, time up. What a beautiful smell of cooking apples. Apple pie. Oh, look at that. What a fabulous apple dessert. A little bit of crunch on the top there. Look, if you press it, you can feel the sponginess. How easy is that to make an apple dessert? No messing around with pastry. So quick. Let’s let it cool down a little minute. We’ll have some out of there. I think I’m going to have it with cream today and not custard. Now, there’s one good thing about these type of puddings. You don’t have to hang around. You know, you can get straight in on this. It’s a pudding. We don’t have to let this thing cool down. Oh, yeah. Come on. Could have been six today, but I think it’s four. Oh, this thing is absolutely steaming. Oh, on there. Oh man, that is hot. There we go. We got all our apples in there with our sponge. Oh, that is delicious. Come on. You know it’s got to be done. A little bit of cream on there. Oh yeah. What a fabulous smell from this pudding. Okay, come on. I’ve got cream on now, but we’re going to just look in there. Oh, our apples. We got this sponge. We got this crusty little crusty top. We got this light sponge with our apples. Oh, it’s a bit warm. Oh, come on. Come on. What an easy recipe to make. Apples have cooked fantastic. They’ve got a little bit of crunch left in them. Oh, they are gorgeous. Another oldfashioned dessert. An easy batter top apple pie. Look at that. Forget the pastry. Tip the batter on. What a result. So easy. Come on. Now, this works beautifully with apple and blackberry. Works beautifully with pears. Perfectly beautiful…need a big scoop of vanilla ice cream..Chef this was my Moms favorite dessert to make thru the week when I was growing up…she had to have dessert everyday after dinner…she came home from work at 3 pm,threw our dinner on then mixed up this cake..we called it CUPPA A CAKE…1 cup flour self rising..1 cup sugar.1 cup milk, 1 egg..dash of vanilla…my favorite fruit was cherry for this…we used the canned fruit pie filling…I am in Southern USA…Chef I hope you dont mind me adding these tidbits of info…

I find your recipes so nostalgic! My Mum was born in 1934 and was brought up by her grandmother, who had been born in 1885. So my mum was what I liked to call the last Edwardian cook, she was married at 16 and lived in the back blocks at first – she used a coal range until her late 20s! Her food was all that lovely working class stuff you associate with pre-WW1 British cooking, but transplanted to NZ with it's higher standard of living (back then). We lived on meat and three vege, puddings and casseroles and pies and baked desserts…. Basically I grew up with Mrs Crocombe's cooking.

Yum! In America we call this a cobbler and here's a tip: Next time, mix the batter right in the baking dish and then spread the fruit over it. Most of the batter will rise up and over the fruit during baking to form that beautiful top crust. The bonus with this method is you only have one pan to clean.

Yum, yum and yum. Absolutely my favourite type of pudding. If you make anything with apples more than a couple of times a year, l recommend getting an apple peeler and corer – the ones with the prongs and the handle that turns. They're pretty cheap, are fun to use and do a GREAT job – takes about 30 seconds to turn an apple into a peeled, sliced and cored apple. Just take it off the gizmo and cut it in half. 😊

We do something similar in the American South. The method is slightly different but the result is much the same, except we usually use peaches. The most common method, using normal pantry items, is as follows: 1/2 stick butter- melted, 1 cup sugar, 1 cup self-rising flour, 1 can peaches, milk; drain the peaches, reserving liquid. Combine liquid with milk to make about 1 cup; pour melted butter in 8×8 casserole; mix flour and sugar in a mixing bowl, add the milk mixture and keep smooth to desired consistency; pour batter over butter in pan; spoon fruit over batter. Bake at 350 for 30ish minutes. Recipe doubles easily, and is commonly doubled and baked in a 9 by 13 casserole dish. I’ve always called this Easy Peach Cobbler. Canned peaches are good but fresh peaches are delightful. BlackBerry is scrumptious too. Obviously with fresh fruit you’d use all milk and maybe toss the fruit in some sugar. For peaches I like to add ginger to the fruit. C’est la vie!

Reminds me of something my mothger used to make after our Sunday roasts when we were kids. She used a cheap vanilla or butter cake mix. She split the cake mix in half and added desiccated coconut and butter to 1 half of the cake mix and make the other half as described on the cake mix packet. Put the coconut and butter mix on the bottom of the pan then put the fruit on top of that, then spread the cake batter over the top. Served with pouring cream or ice cream. It was so good…….
