I’ve been feeding my starter for 3 weeks now and been debating if I should bake my first loaf – decided to pull the trigger and just do it.

I fed my starter the night before, it reached peak in the morning and I used 100g starter, 475g bread flour, 350g water and 10g salt. Let it rest for 30 min then stretch and fold ever 30 min 3 times.

Then let it bulk ferment for 6 hours or so (the dough doubled), shaped it and let it rest in the fridge overnight. This morning I let the Dutch oven warm up in the oven for 45 min at 500F, then transferred the dough inside and baked it covered for 20 min, then uncovered for 20 min at 475F.

I feel like it didn’t brown evenly (the top did but not the sides) so maybe I need to bake it at a lower rack (I baked it in middle rack).

But I’m satisfied with the inside and it tastes amazinnnng.

    You may want to try a cross score like this + next time.

    And hold the blade at a slight angle to the countertop.

    We go about ½ in deep but that depends upon the particular dough you’re scoring.
