    #WHOLE-GRAIN NUT BREAD WITH BROWN SUGAR
    Sift before measuring:

    ¾ cup all-purpose flour
    1½ cups whole-grain flour

    Resift with:

    2½ teaspoons tartrate or phosphate baking powder or 2 teaspoons
    combination type (see Baking Powder, page 501)
    1 teaspoon soda
    ¾ teaspoon salt

    Pack firmly, then stir in:

    ½ to ¾ cup brown sugar

    Add:

    ¾ cup broken nut meats or raisins

    Stir in quickly:

    3 tablespoons melted shortening
    1½ cups sour milk or buttermilk

    Bake the batter in a greased 4 × 9½ inch bread pan in a moderate oven 350° for about 1¼ hours.

    #WHOLE-GRAIN FIG OR DATE BREAD
    Sift before measuring:

    1½ cups all-purpose flour

    You may dust the figs or dates with a little of the flour. Resift with:

    2 teaspoons any baking powder
    ¼ cup brown sugar
    ½ teaspoon salt
    ¾ teaspoon soda

    Add:

    1½ cups whole-grain flour

    Combine:

    1 beaten egg
    1½ cups milk
    ½ cup honey
    2 tablespoons melted butter

    Stir the liquid into the sifted ingredients. Work in well:

    1 cup chopped nuts or dates
    ½ cup chopped pecan meats

    Or omit the nuts and use:

    1½ cups chopped figs or dates

    Place the dough in a greased 6 × 10 inch pan or in two 4 × 7 inch bread pans. Permit it to rise for 20 minutes. Bake it in a slow oven 350° for about 1 hour.

    #BANANA BREAD
    Blend until creamy:

    ⅓ cup shortening
    ⅔ cup sugar
    ¾ teaspoon grated lemon rind

    Beat in:

    1 beaten egg

    Sift before measuring:

    1¾ cups all-purpose flour

    Resift with:

    2 teaspoons tartrate or phosphate baking powder or 1½ teaspoons
    combination type (see Baking Powder, page 501)
    ¼ teaspoon soda

    Mash 2 or 3 fully ripe bananas to make:

    1 cup banana pulp

    Add the sifted ingredients in about 3 parts to the sugar mixture alternately with the banana pulp. Beat the batter after each addition until smooth. Place it in a greased bread pan, about 4 × 8 inches. Bake the bread in a moderate oven 350° for about 1 hour, or until done. You may add to the batter 1 cupful raisins, soft dried prunes, or apricots. or dates and/or ½ cupful nut meats.
