  1. I like it! If the top of T is too underdone for you, you could put it on there standing straight up to cook that area more directly.

    Hard one to cook – that bone acts as a heat shield. I’ve always found reverse searing it can get a more even cook and if you have a high enough heat on a grill or cast iron, you can still get a good crust.

    But would be no complaints if I got served this! Looks like a nice piece of meat!

    My go to method is to take a 50/50 canola oil or avocado oil if you can get it, and butter, “wash” a cast iron pan with a tbsp of each, then drain, slowly heat up the pan to max temp with fan near for smoke, have another cast iron heating up as well, at about 2 minutes searing the steak, lay the other pan down on top of the steak, cook for additional 4 minutes, perfect rare-medium rare with a buttery crust
