Cranberry Sauce
(A recipe shared by Derby Dinner Playhouse that we are happy to share with you!)

1 pound fresh or frozen cranberries
2 oranges peeled, remove seeds if any
2 ribs celery
1 can (14 oz.) whole berry cranberry sauce
1 to 1 1/2 cups sugar, to taste
1 cup pecan, finely chopped

Finely chop the cranberries, oranges , and celery in a food processor.

Stir together the cranberry sauce, 1 cup of sugar, and pecans to dissolve the sugar.

Add in the mixture from your food processor and combine well. Sample the cranberry sauce to see if any of the extra 1/2 cup of sugar needs to be added. Refrigerate until using.

Lasts in the refrigerator at least two weeks and it may be frozen.

Hello everyone. Welcome to Come Sit at My Table. We’re happy to have you with us today. We are just a week away from Thanksgiving and one of the dishes that you just have to have on the table for Thanksgiving is cranberry sauce. It might be a law. It might be. Now, I’m one of those people that absolutely loves the canned cranberry sauce. I see nothing in the world wrong with putting that on the table for Thanksgiving, but there are some absolutely fabulous recipes for cranberry sauce that are very simple to make. We have another video on our channel for cranberry sauce, and I believe I put it on two years ago that is one of the best cranberry sauce recipes I’ve ever eaten. It’s very different from the one we’re making today. There are totally different types of cranberry sauce. Now, this cranberry sauce recipe came from Derby Dinner Playhouse in Clarksville, Indiana. Derby Dinner Playhouse is a dinner theater that Melissa and I have been going to for a long time. 32 years. A long time. First time we went there, we were dating. So, that’s it’s been a long time ago. And it it’s one of our favorite places. It’s our date night. We have season tickets there and we love it. Well, every fall in the month of usually October, November, they sell this cranberry sauce. They serve it with the meals when they have plays, have dinner shows, and they also sell it in tubs. Well, even though I can make it, I still buy it from them. And it freezes really well. So, if you make this and you want to make it ahead of time, you can freeze it and then thaw it out right before you’re going to serve it. So, I really encourage you to give this a try. We think it’s fabulous. Now, how did I get this recipe? Well, I went to we went to Derby dinner and I bought some and I came home and I thought, man, I wish I could make this myself. I want more of it, but I don’t want to drive back to Indiana to get it. So, I just sent an email and said, “Hey, is there any way you could share the recipe?” And they sent it to me. So, here’s the recipe that they sent me, and we’re going to make it today. I think you’re going to absolutely love it. Let’s talk about what we’re going to use to make our Derby Dinner Playhouse cranberry sauce. We’re going to start with one pound of cranberries. You can use fresh or you can use frozen. I’m using the frozen ones today. I will tell you that when I’ve made it in the past, I have used fresh ones, too. And I really do like it made with the fresh cranberries, but it’s so easy to have these in your freezer. So, I’m using the frozen today. You’re going to need two oranges. And we are going to peel these. You don’t, of course, you don’t use the peel, but these are navl oranges, so they should be seedless, but I’m not sure that they are. So, after we get them peeled, we will check to make sure there are no seeds in any of the segments. We’re going to use two ribs of celery, and I will cut those into chunks, like maybe into thirds or fourths. And those three ingredients, the cranberries, the oranges, and the celery, are going to be put in a food processor. And we’re going to process them until they’re ground up. Now, after we do that, we are going to add them to one can of whole berry cranberry sauce. We’re going to add one cup of sugar. Now, you might be saying, “Well, why do you have 1 and 1/2 cups out there?” Because sometimes if your cranberries are really tart, you might have to add an extra little bit of sugar. Maybe up to half a cup. You may not need that half cup at all. You might only want the one cup. And we will definitely put one cup in it. But we might use part of that or all of that half cup. And the last thing we’re going to use is some ground pecans. Now, I am going to grind these up because you want everything in this to be very fine. You want it to be really chopped up or ground up. So, I’m going to use my little grinder to grind those up. That’s how simple it is. Six ingredients. No cooking, no heating up the kitchen. It’s very simple to put together. So, I’m going to start by peeling and checking my oranges for seeds. I will cut up my celery and I’m going to grind up the pecans. Then after I get those three things done, we’re going to come back and put our cranberries, oranges, and celery in the food processor and get those ground up really well before we combine everything together. All [Applause] right, we are putting our cranberries in our food processor. I’m going to add our celery pieces. And I just cut those into chunks. And I’m going to add our orange segments right in there. And of course, we’ll put the lid on. And now we’re just going to process it. I’m going to start on low and then we’ll maybe go to high if we need to. Okay, I’m going to stop it and scrape down the sides. We just want to make sure. Look at that color. Oh, it smells so good. I know. Yum. Can hardly wait to get this made. And I love that this is something you don’t even have to cook. You just grind it up and stir it together. But you do want to make sure that it is ground up. I’m going to scrape it down one more time just to make sure that everything’s down in there and being ground up. We don’t want any big chunks. See two big chunks of of um cranberries right there. And you don’t want that. You want them ground up. You don’t want to grind it until it just becomes mush. You want chunks, but you do want it to be ground. All right. I’m going to stir together our whole berry cranberry sauce and our nuts and our sugar. Now, I have tasted the oranges when I was peeling them, and they were pretty tart. So, I’m going to be shocked if we don’t need that extra half cup of sugar. I think we’re probably going to have to have it, but we’ll see. I’m going to start with one cup. We can always add more, but you can’t take it out if you put it in and then don’t need it. So, let’s just go ahead and put one cup of our sugar in. And we’ll get that all stirred together and ready to put our chopped cranberries, oranges, and celery in. I’m telling you, this is such a good good cranberry sauce. I look forward every fall to the November showing. Whatever the play is, I look forward to it in November because I know they’re going to have this delicious cranberry sauce. All right, that’s stirred up pretty well. You do want to make sure that that whole berry cranberry sauce is mixed in well. You don’t want a lot of big chunks of it left. So, just take the back of your spoon and kind of press it. Okay, now we’re going in with our ground items. That just goes right in. They do, they told me that they do make this a couple of days before they’re going to serve it. And it can stay in Well, let me tell you what they say. They said you can keep it in your refrigerator for up to two weeks and it will be fine. I don’t think this will last two weeks. We eat it with everything. However, I will admit that we bought it a few years ago and brought it home and somehow part of a tub got pushed to the back of the refrigerator and I forgot about it. I think you did too. and it was probably back there for close to a month and I found it and thought, “Oh no, we have let this ruin and it’s not going to be any good and we we’ve wasted a part of a tub of this delicious cranberry sauce.” Well, I got it out and I thought before I throw this out, I’m going to check it. It was every bit as good as it was the day we bought it. It was just fine. So, they say two weeks, but I’m going to tell you it’ll last a lot longer than that. But unless it gets pushed to the back of your refrigerator, it won’t last long at your house. Look how delicious. M. Okay. Now, I am going to We are going to sample it. All right, baby. I’ve got a spoon for you and a spoon for me. You ready? I am. It may be tart. We may need that extra sugar. Okay, I’m just going to hand you the spoon. I think it’s great. That is so good. I think it’s really good. You think it needs extra sugar? Personally, no. But I think it needs a little bit. I like tart more than you do. Yeah, you do. I’m just going to put part of this in. Maybe a four of a cup. Well, let’s see if that extra 1/4er cup sugar made any difference. Let’s grab us another spoon. Babe, you ready? Sure. I liked it the first bite, though. So, I know you did, but I just felt like it needed a little bit more. Those oranges were a little tart. And heavens, we know those cranberries are tart. All right, here’s the moment of truth. Now, watch. She’ll tell me it’s too sweet. It is a little better. I I’m going to give you That did help. Mhm. Extra quarter of a cup made a difference. Wow. This is so good, you all. And you see how easy that is. No cooking, no standing over a fire. [Music] That is fabulous. So you can make it ahead. And that’s a really nice feature too of this recipe. Yeah, you can make it several days ahead. Leave it in your refrigerator. I actually think the longer it sits, the better it gets. So, make it a few days ahead. Let it sit in the refrigerator. Hope we have some left by Thanksgiving because, you know, we’ll eat this with everything. Probably have to make another batch. This goes with Listen, I know you’re going to think this sounds crazy, but this is wonderful with tuna fish sandwiches. It goes so well with tuna fish sandwiches. That’s my opinion. Okay. I hope you’ll give this a try. It’s a totally different kind of cranberry sauce than what we videoed and put on two years ago, but it’s fabulous, guys.   8. My husband and I have had season tickets to Derby Dinner for more than thirty years also! I agree with everything you said about this super cranberry sauce. I buy a quart every year, usually at the coffee chat just before the Christmas show opens. It’s the best I’ve ever tasted but I’m going to try the one you put the link up for.   10. Oh, yum, Melissa and Tom! This Cranberry Orange Sauce recipe reminds me a bit of a Waldorf Salad given nuts and celery are used. I suspect this will be a keeper in my kitchen. Will you be featuring your tuna salad recipe, or have you already included it in a video on your YouTube channel?

  12. Yeah, I probably wouldn't make this. Because I really do not like salary at all in any shape or any form. But what I do is I used to buy 2 or 3 or 4 hands of the whole cranberry sauce like you got it's a fruit inside the sauce, but I'M NOT GOING TO RULE OUT THE GELLED CRANBERRY SAUCE JUST BECAUSE IT'S NOT THE SAME AS HAVING A WHOLE SORT OF PRIMARY.I STILL LIKE IT

  15. My sweet Mother made a cranberry salad and it was delicious! It was bagged cranberries, celery, pecans and orange peel. She would grind it all together by hand until she bought a Cuisinart.
    I still make cranberry sauce the way she taught me and I am in my 70’s! Bagged cranberries into a pot with orange zest and the juice, additional orange juice as needed, sugar, ground ginger or grated fresh, touch of ground black pepper and real salt. Cook until thickened and balance flavors to your liking.

  16. My son and I are the only two that eats cranberry sauce. And although we love homemade cranberry goodies we want canned jelled cranberry sauce for Thanksgiving. I just bought an extra 6 bags of fresh cranberries yesterday. We love your cranberry bars. Thank you for this recipe.. I’ll be making this for sure. Love to you both. ❤
