
Made the "lazy way" with a bunch of zucchini slices instead of strips.
For the filling I mixed together cottage cheese, a few chunks (shredded) from a can of chicken, and mashed broccoli/cauliflower. Glopped the filling between a couple layers of zucchini, added a sprinkle of cheese and a tomato slice, and tossed it in the oven (covered) at 350. Screwed around for like half an hour, uncovered it and baked another 10 minutes (probably unnecessary but didn't hurt anything). Scooped onto a plate and enjoyed :3
Probably not for everyone but I really liked it. Will definitely be making again
