First time doing a whole chicken! Spatched, added a little bird bondage, thoroughly dusted over and under skin with hot dirty bird. Came out great. I didn’t even have bump temps to fight for that crispy skin it just.. worked?

    I know I’m supposed to be looking at the chicken but I am really admiring the redskin potatoes- finally, someone who knows how to put a nice crust on them!

    Chicken looks amazing. What temp did you smoke it at? I’ve never managed to get skin like that.

    “Spatched” as in spatchcocked? Doesn’t look like it, and if it were you generally don’t want to bind it back up because the whole point is to get the bird laying flat for more even cooking. That skin looks amazing, though.
