✨ INGREDIENTS:

1 zucchini, chopped into large pieces
2 tbsp olive oil
1 onion, finely chopped
3 garlic cloves, minced
1 pack mushrooms, roughly chopped
1 can chickpeas (drained and rinsed)
1 cup plant-based cream
1 cup water
Salt & pepper to taste
Fresh basil, for garnish

✨ INSTRUCTIONS:

Heat olive oil in a pan and sauté the onion for 2 minutes.
Add garlic and cook for another 2 minutes.
Stir in mushrooms and cook 3–4 minutes.
Add zucchini, season with salt and pepper.
Mix in chickpeas, plant-based cream, and water.
Cook for 3–4 minutes until creamy.
Garnish with fresh basil and enjoy warm.
