

I'm visiting my family in Italy this week and wanted to access some good ingredients I can't find abroad. Hence here's some Garofalo's schiaffoni with a carbonara recipe except the oven baked pumpkin replaces the egg yolks. The rest is the same and I wouldn't call it memorable either but it was properly good.

Interesting take. How’d the squash (carb) do replacing a fat (yolk)? Did you have difficulty emulsifying the sauce?
