What I made for a little get together tonight. Spatchcock chicken, sage + sausage stuffing, roasted garlic mashed potatoes + gravy, brown butter sage dinner rolls, garlicky green beans, cranberry sauce. Apple pie + homemade eggnog ice cream for dessert.

**Spatchcock chicken** is dry brined overnight. Mix together freshly chopped sage + thyme, orange zest, lemon zest, kosher salt, little sugar, black pepper, and garlic powder together. Rubbed all over, including under the skin.

**Mashed potatoes:** Potatoes boiled until fork tender, pushed through potato ricer, butter, heavy cream/whole milk, sour cream, 2 large heads of roasted garlic, garlic powder, lots of parmesan, kosher salt, and black pepper.

i’ve never seen anyone else put sausage in their stuffing! i know it’s probably somewhat common, but most people are surprised when i tell them my grandma’s stuffing has meat in it
