I’ve done loads of ribs etc, but I just bough a Rack of Ribs roast (Costco – picture from the internet). Any of you cooked these yet on the joe? Was going to do low and slow and then sear. Would love some input. (mine aren’t frenched)

Hard to gage the size from the pic, but if they fit in the rotisserie basket, I’d use that. If they don’t, it still ruin them with a hole down the middle foiling the bones for the first half and spin until tender.

I’ve seen them done on the rotisserie in this sub. Try a search. I buy quite a few of these when they have them in. Usally this time of year or holidays. I break them down into four double cut, bone in chops. Vacuum seal and freeze. Sous vide at 140, get my Big Joe blazing hot and finish on the grill.

I used this recipe/method. Now I have to make it every Easter 🐣
I literally have these on my Joe Jr as I type this. I sliced them into chops. They’re great as a roast, by my family prefers the char of chops.

Much more attractive price than beef nowadays (assuming from the color they are pork), I used the rotisserie and it came out great, simple spice up to 165 if I remember correctly
