
I adore soup season! Absolutely massive bowl of curried chicken, pulses and veg soup for under 450cals (bread not included). Recipe made 6 portions – kids enjoyed it too.
650g chicken thigh – lightly fry and shred
Chopped onion
Garlic paste
Mild curry powder – sauté onions, garlic and curry powder
Bung in: Tin reduced fat coconut milk
Tin chopped tomatoes
Tin passata
Tin chickpeas
150g lentils (pre-rinse)
500g chopped sweet potatoes
Simmer as long as you like – I leave it about 45 mins.
Drop in 180g spinach in last couple of minutes until wilted.
