I just wanted to share my gratitude for this sub and offer up some humble Thursday night results. I like it rareish and tender and this sub helped me turn a $20 cut into what tastes like a $50 cut.

Great inside but sear a crust on the outside to make it better

Mods said to foster discussion, so it’s a sirloin that tastes like a premium tenderloin at 134 after being simply seasoned and frozen before being put in the bath. Cast iron after that for the sides etc. Thanks again to the community and I do play around with time and temps and cuts so today was more of an experiment turned delicious.

A little blue for me but if you like it, all that matters! Make sure to dry off the steak after taking it out of the bag so you get a nice crust.

I agree with the “dry it” comments. What’s worked well for me is sticking my bathed items on a wire rack and then placing them in the fridge. It cools the meat so that I can sear it longer for a better crust, but it also dries the outside a bit which creates an even better-er crust.

I always sous vide my filets. Kind of unnecessary but they never turn out too raw
