I feel like I should have taken it off a minute sooner but it was still great. AAA ribeye dry brined and rosemary-garlic butter basted. Its my go-to.

    Definitely medium. Depending when it was cut (if it was left to rest) it could even continue to cook into the range of medium well.

  3. Why can’t people ever accurately identify medium? This is just plain old medium. It’s not on its way to medium well. there’s no medium medium well. Medium is the state that’s between medium rare and medium well.

    Full-on medium. A minute or two longer and it would have been mid-well.
