Head Chef was away for the evening so this was the sous chef’s take, with a temporary name change too. A creative and interesting fusion between Japanese and French influences (based on sous chef’s French training). Wine pairing was sensational. Slightly disappointed to not have tried the regular menu but would definitely go back for another shot.
