    Pretty good, but wish the fast was a bit better rendered.

    Looks good. I would try to not season until after cooking next time to keep the pepper from burning, unless you like that. I would also sear the fat cap separately a little bit more.

    Perfect medium rare and even crust on both sides. Overall 9/10
