Roasted Bell Pepper Salad
This bell pepper salad is just amazing! It’s delicious and nutritious.
Ingredients:
6 large bell peppers (green, yellow, red) roasted
3 cloves finely chopped garlic
Parsley finely chopped
1 tbsp red wine vinegar
2 tbsp balsamic vinegar
3 tbsp extra virgin olive oil
Salt and pepper
Some juice from bell peppers
Method:
1. Lay the bell peppers on a roasting tin and roast in a hot oven (200-220 degree Celsius) until all sides are charred.
2. Transfer it to a large bowl and cover with cling film. This is to allow the steam to lift the skin of the peppers to make it easier to peel. Leave to cool down before peeling. Keep some of the juice from the peppers.
3. Cut the peppers into strips about 1-2 cm thick. Then add all the ingredients.
4. Enjoy!
