
This is not exactly a canning question but adjacent enough I hope! I followed this recipe for persimmon jam:

Tl;dr of the recipe:
▢ 12 lbs persimmons, about 10-12 large fuyu persimmons, or about 11-12 cups sliced
▢ 3 to 6 cups sugar, adjust to your tastes (I used about 3,5 cups)
▢ 0.75 to 1.5 cup lemon or lime juice
I ran out of space and time after hours of working on this that day, so just filled three jars and placed them in the fridge. My question is; how long will those in the fridge last? They’re in regular mason jars with the two-piece lids tightly closed. I’m eating as much as I can every day!

I would throw 2 in the freezer! They should have a similar fridge lifespan as you’d expect with store bought jam. Maybe a couple of months, just keep an eye out for mold!
