Guys, it was snowing this morning and hoodie season is in full effect. Let’s do one of these roast chicken dinners. That’s perfect for a cold day. I’m going to start with some legs and thighs. And I hit it with my own red chili jalapeno oil. This stuff’s absolutely delicious. Next, we season up salt, pepper. This is going to be an herb chicken. So, I have some rosemary. I have thyme. I have basil. And I have some oregano. We’re going to finish this whole thing with paprika. Just get in there and mix it all around. Be sure we get full coverage on that chicken. We want every little bite to taste perfect. Once that’s done, we’re going to lay it out on a sheet pan. I just throw some parchment down to make clean up a little bit easier. My oven’s at 400°. I’m going to roast these for about an hour until they’re all the way cooked through. And I take some potatoes, chop them up just like that. And we’re going lemon pepper. So, I start with old school camos lemon oil. Then I get this lemon pepper seasoning. Just going to sprinkle it right on top. I put a pretty healthy amount on there. Again, I’m looking for full coverage on these ters. Mix them all around. Don’t let any escape. Grab another pan with some parchment. Throw them down. These are going to go about 375 for an hour. I don’t want them to burn. I get my zucchini, chop those up. I’m going to add a little bit of diced up red bell pepper. I’m also going to chop up an onion that I had in the fridge. That’ll be perfect. Those are going to go into a pan with a little bit of my olive oil. Throw those in. Get it nice and hot. We’re giving these a really quick hot sear. I want them to get cooked on the outside and stay a little al dente on the center. Salt, pepper is going to be my starter. We’re going to finish with a little bit of rosemary. That’s it. Super simple. Little tossy toss. Our veggies are ready. Let me show you how we’re going to plate this, guys. It’s really easy. First, we’re going to pull everything out. So, the chicken’s ready. Super crispy skin. It looks absolutely perfect. Potatoes have a little crisp on the edge while they’re pillowy on the inside. Two pieces of chicken go down. We load up some potatoes. We’re going to add on those fresh sauteed veggies. And look at that. Oven roasted chicken with lemon pepper potatoes and fresh zucchini. Man, what a treat. Thanks for watching. Cheers, everyone.

  3. Hey Kevin have you ever made any kind of Chicken Soup with healing herbs for the Girls when a nasty cold or Flu is going threw the place along with having a bunch of kettles full of Herbal Teas. Since there is a nasty bug going around. Heck even stocking up on natural real ginger ales to help settle a bunch of stomachs.
