150g starter 350g water 500g bread flour 7g salt

Rest for 1 hour; 4x S&F w/ 45mins in between! Baked at 425F ; 20 mins w lid on 40 without. Cooled overnight!

I want to explore inclusions next, any tips? ◡̈ thank you!!

  3. Don’t know much about inclusions, but I do know a decent crumb when I see one. Nice work! A lot of starter, though, and I like more salt in mine.

    Looks delicious! For inclusions, I like trying out seeds first. They’re less persnickety than a lot of other inclusions like fruits, cheese, etc.

  8. I think your 4th looks better than my 9th, which had great loft but was rock hard on the outside and raw within.
