  5. Tuesday, we planned to make taco spuds (taco seasoned ground beef +salsa on a baked tater).

    Instead, we make smashed baby potatoes (parboiled crushed/flattened, hit with sea salt & baked) served with the meat and friends, it was stunning. It was a little like potato nachos once we added cheese & jarred jalapenos. 10/10 would eat again. Your baked potato brought back those memories (and now I want to added onions the next time I make it!). Mmm…

  7. I’m a huge fan of the 5 minute microwave method from serious eats. Stab with a fork, 5 minute microwave then rub the outside with oil, pepper and salt after and a bake for 20 mins at 450. Turns out great!
