I had some potatoes that needed using, so I tried canning them for the first time. What are some of your favorite ways to use them? I'm sure they'd be good for potato salad or mashed potatoes, but do you have any other favorite recipes?

When I think of them for mashed potatoes, I think about them as a convenience for when mashed potato’s are part of something else to shorten that time. Like Shepard’s pie
I love cubing them and frying them for breakfast. They’re also great roasted under the broiler to get crispy.
