Keeping half of my plate veggies, one quarter whole grains and one quarter lean protein is easier than I thought.

I thought “healthy eating” had to mean “meal-prep-of-complex-veggie-recipes”. However, I threw this meal together in minutes with pre-made and low prep ingredients.

Whole grain sourdough, store-bought hummus, cucumbers, tamari almonds, local greens with olive oil and red wine vinegar.

I am realizing it’s all about balance. If I want ice cream? I consider it as part of the metaphorical plate. It becomes the protein/carb/fat on my “plate” that I eat with fruit or veggies. Means I can have ice cream as a treat as long as I follow it up with some baby carrots and cucumbers or grapes! And I actually want to eat the veggies cause I will feel better after. I don’t eat them because I’m punishing myself.
