This is going to sound insane, but as a person who does like dosa, and appreciates the cooking process and the awesome visual in presentation, I wish after that display, they would cut it up and assemble everything for me for perfect bites.
I’m not worried about the dosa being soggy because I’d just shovel it all in like a trash compactor.
