Recently added the Classic Joe II to my grill options, and already know I’m going to have fun with this! Filled about half the basket with lump charcoal and 2 pieces of hickory. Brought the temp to 400, flipping the wings frequently. Tossed in some buffalo at the end and threw them back on to finish for a few minutes. Dry rub with honey hog, can’t beat it!

    Yeah…. your not gonna like that pearly white turning chicken grease black.

    On your next cook, as it comes up to temp wait till all that chicken fat burns off (the white smoke will stop) the proceed.

    Go get yourself a cheap 14 or 16 inch stainless drip pan for future use. Cover with aluminum foil to avoid clean up.

  3. Curious OP, what’s the grate on top of your reflector? Those look pretty good btw.
