If you have a Wegmans near you, I implore you to pick up a tube (or ten) of their breakfast sausage, and liberally apply smoke until about 195-200 internal. You will not be disappointed. I have been doing this weekly for my work lunches and It’s been months and they have yet to bore me. My co-workers both love and hate me. I share on occasion as to not foster and resentment. People love to and I’ve always had someone pay me to make them some.

  7. Called a fattie. Been a staple for meat smoking. Often it’s what people do to break in their smokers bc they are fool proof

    I’ve been doing something like this for years. I smoke the whole sausage pack, slice it, then put the patties on the black stone and make sausage biscuits with them.

  10. I add rub to them, roll them in plastic wrap and pop in the fridge for about 30-45 min. Then onto the smoker. They are called little fatties and I was told they are great for seasoning new grills, so it’s always my first smoke on any new smokers.

    I don’t have Wegmans, but is wegmans sausage similar to?  You say Italian blends are trash on the smoker… what would reccomend otherwise; sage, breakfast maple, plain, hot/spicy?

    Why 200 degrees instead of 165? Does it make a difference? I feel like 195/200 would over cook it (clearly not, but you know what I mean)

    It’s delicious and from Wegmans! They’re a solid mass of spiced pork that you can roll into balls or flatten for patties, etc.
