

Kicked out three sweet potato pies from some canned sweet potato cubes I made last year 🥰
2 quarts of cubed sweet potato
1 C softened butter
2 C sugar
4 eggs
1 t cinnamon
1 t ginger
1 t mace (or nutmeg)
2 t vanilla
Splash of milk depending on the consistency of the filling
Parbake crusts at 350 for 10 mins
Let sweet potato cubes drain while you prep the rest of the filling ingredients
Mix all together and whip well to combine
Bake @350 for 55-60min, until a toothpick comes out clean from center of pie

Yes! Looks good.
We canned a number of different types of pumpkins and winter squash last year (some exotic types). They all have orange flesh and they all taste the same in a pie.
