Seeds & Red Fife

    Inspired by a recipe from the book “Sourdough Baking โ€“ A Treatise” by Thomas Teffri-Chambelland.

    Recipe:

    Seed mix:
    – 40% sunflower seeds (toasted)
    – 40% pumpkin seeds
    – 10% sesame seeds (toasted)
    – 5% poppy seeds
    – 5% ground flax seeds

    Main dough:
    – 40% whole-grain Red Fife flour
    – 60% bread flour
    – 30% seed mix
    – 75% water
    – 2.3% salt
    – 20% starter (75% hydration)

    Method:
    Same as all my other posts.
    Regarding the seeds, make sure to add them after the salt, once the gluten network has been properly developed.
