Pretty sure its tuna belly aka toro. Could be yellowtail too but yellowtail typically has a brighter red portion – I guess it might not depending on how its cut.

Unseared albacore. Looks very much more like albacore than hamachi
Here’s a ref pic of the meat on the loin of albacore
They Tuna is the King of sushi, and folks love piles of Salmon, but I‘d be happy with just Hamachi (Yellowtail) for the rest of my days. Simply the best. Looks mostly like that, but not entirely 🤷♂️
