    Great job on all of it. Medium rare steak. Crisp and well seasoned potatoes. And green beans that are cooked but not cooked to the point of being washed out looking.

    Looks great, fat looks rendered properly, it’s juicy and the crust looks nice. I prefer it rare, but would gladly eat this. Great fuckn job.

    Try dry brining in the fridge for 6-8 hours before cooking if you haven’t. With this method, the crust is the best I’ve ever had and there is great salt distribution throughout the whole steak. Really takes the steak to the next level.
