    **Ingredient**s

    Peach Filling
    • 4 peaches, diced (about 2 cups / 600 g)
    • ½ cup (110 g) brown sugar
    • 1 tsp cinnamon
    • ½ tsp nutmeg
    • 1 tsp lemon juice
    • 1 tbsp cornstarch
    • 1 tbsp water
    • ½ tsp vanilla extract

    Crust + Crumble
    • ¾ cup (170 g) melted butter
    • 1 ½ cups (195 g) all-purpose flour
    • 1 cup (100 g) whole rolled oats
    • ¾ cup (165 g) brown sugar
    • ¾ tsp baking soda
    • ½ tsp salt
    • ½ tsp cinnamon

    **Directions**

    **- Peach Filling Preparation**

    1.Cook the peaches Add peaches, brown sugar, lemon juice, cinnamon, and nutmeg to a saucepan. Cook on medium for 4–6 minutes until the peaches soften.

    2.Thicken the filling Mix cornstarch and water in a small bowl. Pour into the peaches and stir for 1 minute until thick.

    3.Cool the filling Remove from heat. Stir in vanilla. Transfer to a bowl and let it cool fully. Chill in the fridge or freezer if needed.

    **- Crust & Crumble**

    4. Heat the oven
    Preheat to 350°F (175°C). Line a 9×9 inch pan with parchment with an overhang.

    5. Mix the crumble
    Stir melted butter, flour, oats, brown sugar, baking soda, salt, and cinnamon in a bowl.

    6. Make the crust
    Keep 1 cup of the crumble for the top. Press the rest into the pan.

    7. Pre-bake the crust
    Bake for 10 minutes.

    **- Assembly & Final Baking**

    8. Add the filling
    Spread the cooled peach filling over the crust.

    9. Add the crumble topping
    Sprinkle the reserved crumble mix over the peaches.

    10. Bake
    Bake for 28–33 minutes until the top is golden.

    11. Cool and cut
    Let cool fully in the pan before slicing so the bars hold their shape.
