Yesterday I posted a brisket I snagged from Walmart to cook for the family on Thanksgiving. It was tagged as Select , about 10lbs, $48. After some thought and feedback, and the fact I’ve never smoked a brisket before. I decided that I’ll grab a nicer piece of meat for the family, since ya know they’re family and their opinions matter to me and I’ll cook this one for myself and experiment. It was pretty mangled up when I took it out of the package, trimmed it up, salt and pepper and threw it on. 180-190 for 8 hours, wrapped for about 2 hours, maybe a bit more at 250 until the internal was at 205. Rested in a cooler for an hour and since I wasn’t quite ready to eat it yet I rested it at 170 in the oven for about 5 hours. Overall I am very happy with the outcome. Tender, juicy, and very flavorful. Not dry. Some parts were a bit drier than others, but still wouldn’t say dry. It didn’t quite melt in my mouth though, it was a bit rubbery. Maybe from resting in the oven? Didn’t cook long enough? Or cooked too long unwrapped? Or overall quality of meat? Im not sure, but it was more than edible and I’m not disappointed with my first brisket. Picked up a 15lb prime brisket from Costco for $89, looks a lot nicer, which will now be for Thanksgiving.
