I think this saffron, honey, and palenta loaf is the closest thing to sunshine I’ve ever baked, which I think we all need a bit of now that it looks like this outside. It has such a rich color, which is all thanks to St. Used’s large eggs, which have the brightest yolks and are always just my favorite for baking. I’ve swapped butter for Mellow Yellow’s cold pressed rap seed oil, which gives the cake a subtle nutty flavor and add so much moisture. I mean, the batter already looks so yellow against this Mason cash bowl, and I haven’t even added the saffron yet. There’s a bit of palenta in there for texture, a squeeze of honey for extra sweetness, and a saffron and orange infusion to really amp up that warm golden color even further.   1. Am I the only one who loves cloudy and rainy weather🥺? It feels so gloomy yes, but it also gives me a sense of calm before the storm or an adventure that will soon unfold once the storm breaks, causing different worlds to collide and be forced to work together to survive but in the process will become like family and never live life the same way again.
