I'm so proud of myself, I was so nervous it was going to not turn out as good as I had hoped, and for a moment there i was overwhelmed with all the recipes, videos, guides, posts…etc. I I just took the basics and didn't over think it. I just did it. I couldn't be happier for a first loaf. I let it cool down, cut a piece and had my first bite with kerrygold salted butter.

Absolutely amazing

I just kept it simple.
500g flour, 350g water, 150g homemade 3 week old starter, 12g salt.
Mixed all together, placed in a small mixing bowl and put it 30 mins in oven with light on (for warmth not baking), then folded, 2 complete rotations, back in oven with light on. Did this 4 times. Then I put it in a container, put a lid on it and left it on the counter overnight (8hrs) Next morning took it out did 1 fold rotation, but kept the air in it. Tightened the dough then put it in a larger round bowl with towel liner and rice flower. In fridge to cold ferment for 16 hrs. (24hrs total) Took out and baked in Dutch oven at 475 for 20 mins then 450 for 22 mins with lid off.

I'll figure out the cuts later to make it pretty, I really just wanted it to be good and fluffy first lol

Tips, have a large counter space, and dough scraper both rounded and flat. Plan out the timing right, don't overthink it. Build a healthy starter by keeping at it and learning what it likes over the course of 2-3 weeks.
