


First attempt at smoked beef barbacoa
Smoked chuck roast at 225 to 160deg
Homemade marinade/sauce with sautéed adobo chiles, beef broth, onions, jalapeño, serano, garlic.
Homemade green salsa with sautéed red onion, tomatillos, jalapeño, garlic and avocado oil. Blended with pineapple juice and avocados.
Pico de gallo. Didn’t have tomatoes, so used purple onion, garlic, jalapeño, sweet peppers.
