‘The Simple Gesture of an Infinite Story’ is the result of a collaboration between the Ministry of Foreign Affairs, the University of Parma and Alma-Scuola Internazionale di Cucina Italiana, for the 2025 edition of Italian Cuisine Week in the World.

   
The initiative is based on the scientific analysis of more than 1,500 recipes from an Italian cookbook from the 1970s, assessing their environmental impact and nutritional value.

   
The study brought to light gastronomic ideas that are still relevant today: many dishes naturally have a high vegetable component, a good fiber content and a strong adherence to seasonality. In other cases, simple adjustments allow recipes to be updated, making them healthier, more inclusive and environmentally friendly, without losing their cultural identity.

   
The project offers new keys to interpreting Italian regional recipes, focusing in particular on the nutritional profile and environmental sustainability. Through a journey that enhances the identity products and gestures of our gastronomic culture, the journey begins with a scientific analysis of a 1970s cookbook. From there, a narrative is developed articulated around five simple gestures, each linked to ingredients and fundamental values of Italian cuisine.

   
As part of the project, Italian Embassies and Consulates will be able to organize culinary and academic Masterclasses, cooking competitions and gala events with Alma chefs and experts.
