Pre-dawn, all quiet except the roar of the propane torch. Brimming with hope that this is gonna be my best brisket ever. It’s like kickoff when your team is playing.

Dude the serenity is out of this world. I love an overnight cook, watching the neighborhood feral cats slink around to nab some of the trimmings and relaxing, making some great food while the rest of the world sleep.
