Eating a few tacos from the Santo Patio food truck right now at Buzzkill in off Riverside. They are pretty darn good (I asked for no cilantro…yes I have THAT gene). They told me its a combination of langua and beef cheeks to minimize the fat. Who else has a good barbacoa in town? Not one that greasy AF and not dry.

    One part beef cheek and one part lengua is how my family makes it too. I thought the barbacoa at De Nada Cantina was pretty good, it comes on blue corn with pickled onions. My issue is that a lot of barbacoa is under-seasoned.

    El Grandpa in Georgetown is good if you are willing to drive out of Austin. Probably more authentic than most people would probably care for.
