recently had the best pasta at a restaurant. The dish description states they use san marzano tomatoes and it's obviously some canned one, i just dont know which brand. the sauce was different from usual restaurants serving this sauce as it was more orange and less of a deep red? it was quite creamy. (not in a way of added cream or cheese but just quite smooth) i was wondering if anyone can think of which brand of canned tomatoes gives this slightly orangey colour rather than red. I love the specific taste it had so im curious lol

    They’re all the same color. I guarantee you there is some kind of fatty dairy emulsified into that sauce.

    Just use the best tinned tomatoes you can get at your supermarket (mine are mutti, not a great selection in UK but these are nice). Like the other commenter said there is some type of dairy in this sauce to make it so bright, probably a lot of butter emulsified in right at the end given it’s from a restaurant

    The slightly orangey colour is probably due to the blender. Crushing tomato seeds changes the final sauce colour. It could also be due to a blended sauce with yellow datterino tomatoes. In my opinion Mutti is the best quality product at the home level.

    I would add that onions will also lighten the colour of the sauce

    The George Delallo Company has the best DOP San Marzano tomatoes in the industry.

    Three ingredient tomatoes sauce. When blended it comes out orange like this. As some have mentioned it’s the onion. 

    It’s a 40 minute recipe and you can then turn it into various other sauces as needed, for example vodka sauce.

    I find for color the tomatoes make no difference, but for flavor the difference is night and day. Mutti has been good. 

    Costco was selling white labelled non Kirkland imported Italian San marzano that were good. 

    The Kirkland ones are meh.

    I bought one can of random imported italian tomatoes that were legitimately terrible, very acidic and inedible.

    It’s a pretty mixed bag hence my reading this post as I am also looking.

    If you live in the uk head to your nearest italian deli for tinned tomatoes. They will be a little more expansive than your supermarket ones but you will get what you pay for. On the tin it should list San Marzano and water as the only ingredients. Unless labeled San marzano most tins in supermarket will just be regular crushed tomatoes.
