Hi guys! I made the strawberry spreadable fruit from Ball Home Preserving book. The recipe indicates a yield of 8 250mL jars, but I only ended up with 4. I’m not sure if I over reduced? Also, despite de-bubbling prior to processing, I ended up with at least one large-ish bubble per can. Thoughts?

    I’m curious what others say. I’ve been canning for years and this always happens to me (more or less than the recipe says)

    The bubbles are fine – you will never get all the bubbles out. Yield can vary quite a lot depending on the density of your fruit. It’s a little surprising that you got only 4 jars, but if you’re sure you followed the recipe correctly, I wouldn’t worry about it.

    Unless you missed something, I’d personally say you definitly over cooked it somewhere. 5 apples and 3 litres of any berries should not cook down to 3 cups.
